Egg Free

I had the chance to make a couple of waffles this week that is straight out of the pancake mix alongside some maple syrup or dairy-free whipping cream if you like. I had a couple different type of waffles off the mini iron waffle maker and although some aren’t perfect but you would need to add up to one cup of pancake mix flour as well as one up of water or rice milk or a mix of both alongside some sugar/monk fruit sugar, a bit of salt, a bit of baking powder and one egg replacer from Orgran.

That way, you will have an even batter on both the dry and wet ingredient sides that is going to turn out well once it’s good to go throughout the cooking process. Again, it’s best to say that less is more including when you pour it onto the iron press with a bit of cooking oil spray beforehand (or will turn out sticky) and your waffles can turn out great with a bit of crisp on the oustide. Also, don’t overload it like putting too much wet ingredients over the dry ones that would look runny at worst unless you add some more pancake mix/flour as if a disaster is waiting to happen & your waffles will 100% collapse at cooking time.

Yes, I haven’t tried the waffles with the waffle mix in it that might be a bit more crispy as it will take a while to find the right product that is both egg and dairy free. Although the ones I tried with the pancake mix isn’t bad as just add some sugar/monkfruit sugar alongside some baking powder and it will be fine. There is still a long way to go for me to perfect these waffles that will hopefully emulate like the restaurant-quality version (we don’t have a lot of Waffle Houses in Australia unlike the USA) but still, gotta say less is more when you make these waffles when you really need them & sure you’ll love it on top of these maple syrup, fruit and dairy-free whipping cream toppings for your perfect breakfast meal to kickstart the day.

And the Prenetti’s Mini Waffle maker product I brought off is a local Harris Scarfe store at around $15-20 dollars at the time as not sure if they still sell these but you should be able to buy one where they got most of the stock online.

Truly, breading chicken with breadcrumbs is an art in itself that opens up the door to so many more possibilities than one could imagine for diets. It opens the door to veganism, being allergic to eggs, dairy, or just wanting an improved way of breading for health reasons. In this guide, we are going to learn some of the diverse ways and techniques in which one can bread their chicken to be crispy and tasty, all while remaining totally plant-based and allergy-friendly.

Break Down the Ingredients:

Before we go into the recipes, let’s know the ingredients we’ll be using :

● Chicken Alternatives: Choose plant-based chicken alternatives like seitan, tofu, or tempeh for a completely vegan recipe.

● Breadcrumbs: Just check the ingredient list of the store-bought or homemade variety to ensure they are egg and dairy-free.

● Binders: Eggs are substituted with a number of alternatives such as aquafaba (brine from chickpeas), flaxseed meal, or cornstarch mixed with water.

● Spices: Play around with the spices you could add, such as garlic powder,  powdered chives,  ground bell peppers, dried oregano, nutritional yeast.

● Cooking Oil: Use high heat oil, like canola, vegetable, or peanut, for frying or baking.

Aquafaba Magic

Breading: Canned chickpeas make a great egg replacer and work really well in breading. Here’s how:

● Drain a can of chickpeas and collect the aquafaba in a bowl.

● Soak the meat substitute in aquafaba, ensuring they are well coated.

● Pop the chicken into the bowl with seasoned breadcrumbs and toss.

● Repeat the previous steps to obtain the right thickness of.

● Deep fry or bake the coated chicken until golden brown.

Flax Power

Flaxseeds are very nutritious and serve as a good binder in breading recipes. To use flax as an egg replacer in breading mixtures:

● Mix together ground flaxseed meal and water in the ratio of 1 tablespoon of flaxseed meal to 3 tablespoons of water for each egg being replaced.

● Leave for a few minutes until the mixture achieves gel-like consistency.

● Dip the chicken alternative into the flaxseed mix and coat well.

● Bread the chicken in seasoned crumbs.

● Fry, or bake to a delicate brown.

Cornflour Coating:

Cornstarch is another perfect egg substitute in that it adds to the crispy crust. Here is how to use it in your breadingprocedure.

● Mix cornstarch and water to make a slurry.

● Dredge the chicken sub through the cornstarch slurry, dredging it.

● Move the chicken to the bowl with the breadcrumbs and coat thoroughly.

● Cook again if extra crispy is desired.

● Deep fry or oven-bake until the outside breading is golden brown and the chicken substitute is cooked.

Type of Baking

For the healthier alternative to frying, bake your breaded chicken. Here’s how you do it.

● Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

● Bread the chicken substitute with aquafaba, flaxseed, or cornstarch.

● Transfer the chicken to the prepared baking sheet.

● Spritz or paint it with some cooking oil to help get it to brown.

● Bake for 25-30 minutes and turn the pieces halfway through to ensure a uniformly crispy breading and full internal cooking.

Following up from my McChicken recipe a few weeks ago – mainly with the patty of course, I’ve spent some time making the same type of chicken breading variety but this time it’s something to do with the egg-free chicken nuggets.

Here are the following ingredients:

  • Ground chicken mince
  • Some Salt
  • Some Oil
  • Some Garlic Powder
  • Some mustard sauce instead of the egg to make the chicken stick
  • And of course, panko bread crumbs

All you have to do is mix these following ingredients first apart from the panko bread crumbs in which will come in shortly.

Once the chicken, mustard and the seasoning has been mixed, divide the minced chicken to a few decent sized pieces (small rectangle size would be good) & stick the chicken on the breadcrumbs by adding a few at a time until each of the nuggets are fully coated.

After that, you can put these coated nuggets onto the air fryer for about 15 minutes at 185-190 degrees by flipping it through the halfway cooking stage.

And once the cooking process is done, cool it off for another minutes before it’s all ready to eat – too easy!! See it for yourself when you can go try make your own egg-free or McDonald’s style egg free chicken nuggets or even egg and dairy free popcorn chicken at home. You can also pair it up with these homemade air fryer chips as a side too!!

I had the chance to try & get the best out of my pastry making skills over the weekend when it comes to these home made apple pies or any other savoury pie filling you like (e.g. chicken or potato pie).

Ingredients:

  • 2-4 cups of flour
  • A few tablespoons of rice milk/water
  • 1/3 cup of avocado oil
  • Some sprinkles of salt and sugar
  • And any filling you like to fill it inside & cover up the pastry dough before baking

All you have to do is pour 1/3 cup of avocado into a bowl followed by some pinches of salt & sugar before adding 2 cups of plain flour, as well as few tablespoons of rice milk or water for a start. Then mix it up using your hands or through a food processing machine for a few minutes while adding a few more tablespoons of rice/milk at a time, so they can end up sticking together (not too sticky!) & finish it off onto a rectangle or disk shape layout on your pastry dough.

After that, cover the dough with a medium to large freezer bag nice & tight with a bowl into the refrigerator for at least an hour. Once the dough has been rested, get your rolling pin out & roll it out to the desired thickness & shape you want, then leave it out onto the sausage roll maker machine nice & flat by adding your favourite filling before closing the pastry nice & tight ahead of the cooking process.

It will take 30 minutes to get the job done where you will have to flip one side at the halfway mark (15 min). Once it’s been cooked & also cooled down for a few minutes, the natural avocado oil pastry got there will be crispy & golden on the outside while you can see the awesome saucy filling on the inside – How good!!

Final Thoughts

For the best results of making such homemade pastry, I would make two pastry doughs to cover both sides well with the filling in between since there’s no puff pastry sheets that is margarine-free from the supermarket freezer shelves.

It can be tricky to find a dairy & egg free equivalent of these ready-made frozen pastry sheets that doesn’t require a lot of work, especially when some may contain milk as they’re all processed within the one equipment from the factory.

However, making them at home is a better, cheaper & safer option – so you can eat it naturally & also healthier too! See it for yourself with the avocado oil pastry recipe that is egg & dairy free to make at home.

Here’s a delicious and healthy way to start your day with the Orgran Vegan Easy Egg, which is an egg & dairy-free.

All you have to do is put a few teaspoons of the vegan egg powder into a small bowl as per packaging, then mix it up with a few drops of oil, as well as some salt & water, and you can put it straight onto a small non-stick pan with a spatula once you turn on the stove. Then you can simply flip it over a few times & turn off the heat once it’s ready with any wooden utensil you like.

Too easy!!

You can put on any vegan egg you also like the vegan egg sandwich I’ve made over the weekend alongside some lettuce, avocado & cherry tomatoes that is drizzled by tomato sauce. You can also use them as scrambled vegan eggs for lunch or dinner as well as salads, quiches, omelettes, frittatas & a whole lot more.

See it for yourself when you can have the egg-free variety at any time of the day thanks to Orgran!!

Here’s an awesome McChicken burger that I re-created by myself lately but only egg and dairy free.

Here’s the following ingredients in order to make it into a patty:

  • Some ground chicken mince or dice into very small pieces if you have one full slice of free-range chicken breast
  • Some mustard
  • Some garlic powder
  • Some pinches of salt
  • A bit of ginger & oil

All you have to mix these ingredients first before you coat them up with dairy-free Panko Bread Crumbs. If that’s not enough then you can always add a bit more mustard so it can stick to the patty well which works great instead of egg.

Now that the patty has been coated by the bread crumbs, put it onto the air fryer for 14-15 minutes at 190 degrees Celsius while you flip one patty onto the other side halfway through the cooking process (7th minute). Once the cooking process is done, cool the patty first for a few mins.

Then make sure you wash some fresh lettuce first before you can cut them up into small pieces while you open & cut the middle on one of these round soft burger buns. After that, top up the chicken first on the base of the bun followed by dairy-free mayo at the top that is accompanied by the lettuce & voila…here’s my our McChicken burger that is now good to eat!

Not only it’s so delicious, but it’s also easy to make too where you can make a few of them as you like instead of one, which costs less than the usual $8 we buy at McDonald’s!! You can even compliment them with some fries and/or even make tea as your preferred cup of drink instead of soft drinks like Coca Cola or Sprite.

Check it out for yourself when you really don’t need to eat out at McDonald’s often by making your own McChicken burger at home!!

Here’s an amazing diary-free & vegan chocolate spread that I’ve tasted earlier today thanks to the Sweet William brand.

They are perfect for sandwiches, fruits, pancakes, desserts & snacks – especially when preparing a healthy kids diet for breakfast, recess and/or lunch. However, my preferred topping belongs on cakes & even donuts which works really well alongside these colourful 100s & 1000s sprinkles from Dollar Sweets (190g pack).

I just wished they can make a different dairy free chocolate spread but in white vanilla flavour & not only that, I can play around some food colouring as well to reflect a different icing of cake/donuts other than chocolate. But still, it’s a nice chocolate spread to have that you can put on almost everything while they’re safe to eat away from dairy, eggs & nuts.

Although they’re out of stock on Amazon right now with no restocking date being finalised at this stage, but there’s still some units available to try here on eBay.
