Lunch

Following up from my McChicken recipe a few weeks ago – mainly with the patty of course, I’ve spent some time making the same type of chicken breading variety but this time it’s something to do with the egg-free chicken nuggets.

Here are the following ingredients:

  • Ground chicken mince
  • Some Salt
  • Some Oil
  • Some Garlic Powder
  • Some mustard sauce instead of the egg to make the chicken stick
  • And of course, panko bread crumbs

All you have to do is mix these following ingredients first apart from the panko bread crumbs in which will come in shortly.

Once the chicken, mustard and the seasoning has been mixed, divide the minced chicken to a few decent sized pieces (small rectangle size would be good) & stick the chicken on the breadcrumbs by adding a few at a time until each of the nuggets are fully coated.

After that, you can put these coated nuggets onto the air fryer for about 15 minutes at 185-190 degrees by flipping it through the halfway cooking stage.

And once the cooking process is done, cool it off for another minutes before it’s all ready to eat – too easy!! See it for yourself when you can go try make your own egg-free or McDonald’s style egg free chicken nuggets or even egg and dairy free popcorn chicken at home. You can also pair it up with these homemade air fryer chips as a side too!!

If the McDonald’s style/rectangular apple and other sweet pies isn’t enough, why not make a savoury version when you can have your own chicken pie with dairy-free gravy at home! For the crust/pastry, you can add a cup of flour as well as a few drips of oil to cover onto a bowl, some salt and sugar and either a few tablespoons of rice milk or water will do as you would want to knead it until your hands are no longer sticky. Put that into the fridge for at least an hour while you go make your own filling by cutting a quarter of chicken of your choice (raw or already frozen) into many pieces, then mix a a tablespoon of dairy-free gravy mix with on a saucepan before you turn the heat up closer to medium and throw the shredded chicken in there also for a few minutes. Once it’s cooked leave the filling until it’s cold for a while, take the pastry out of the fridge after the resting phase and you want to cut the pastry in half to fit a serving of two and leave the other half to save it for next time.

You wanna roll the pastry out with a couple of drops of flour on your chopping board (not too thin) so it doesn’t keep on sticking before you take some chunks out of the pastry in order to make it a perfect rectangular shape for your McDonald’s rectangular style chicken pie. That’s when you can put a good amount of chicken gravy in there, cover the pie up nicely and mix it up with another few drops of flour to stop the pie from sticking out while cooking. Speaking of cooking, put two pies into the air fryer, add a bit of rice milk or oil as your eggwash alternative & fire it up at 185 degrees Celsius for 20 minutes while flipping it to the other side at the halfway mark. And done, cool these pies down for at least 30 minutes as they come out really hot before it’s all ready for you to eat. See it for yourself when you can make your own McDonald’s rectangular style chicken or savoury pies if you like at home as I’m sure you will love this homemade recipe at your own kitchen.

Hello,

It’s been a while since I was last active on my blog a few weeks ago but I’ve been making some awesome food recipes, as well as tasting some cool snacks lately that is going to be yummy, dairy-free and egg-free.

You don’t wanna to miss it as I’ve attached some decent sneak peak photos on a pic collage where I will look to try & post these here consistently at least once a week for a restart.

Plus, I might pop in some occasional tech, health or fitness stuff here from time to time again whenever I might need to take a break from baking/creating/replicating food recipes or posting snack content.

Hope is all well as stay tuned to kick off the Month of May over the next few weeks.

Regards,

Matt

Here’s a delicious chicken & tomato pizza that you can enjoy healthily for lunch or as an afternoon snack.

The following ingredients you need are:

  • Some sliced chicken by cutting it into squares
  • A few drops of Pizza Sauce & then spread them through over the base (although not all of it as leave 1-2 inch around the edges of the crust).
  • Two small frozen Pizza bases
  • Some small/cherry tomatoes
  • Some chopped spring onion

All you have to is prepare these ingredients before you warm up your air fryer or oven at 180 degrees celsius for about five minutes.

Then place your pizza there for 9-10 minutes at the same temperature (although you may have to cook it again for the second small pizza onto an air fryer since they only fit in one base) & it’s good to eat once they’re ready.

It’s up to you how you like your delicious & healthy pizza, even some avocado and/or green veggies on top of these usual ingredients above isn’t a bad option alongside some air fried chips as a side meal.

See it for yourself as I hope you enjoyed this quick minute lunch recipe at home without having to spend some money & eat out a lot elsewhere.

Here’s some tomato pasta that I’ve made for lunch over the last few days with the following ingredients:

  • 1/2 Small to medium tomatoes
  • Some tomato paste
  • Some water to mix the tomato paste
  • A few slices of chicken
  • Some garlic
  • Pasta of any kind to boil
  • Some pinch of salt to taste

All you have to do is boil the pasta first for about 10 minutes, as long as they’re soft, before you dry them out & place them into a bowl using a strainer skimmer.

Then throw some garlic & chicken onto the pan with a couple of drops of oil, followed by some tomatoes & tomato paste, although it’s best to add some water (not too much) to mix up the tomato paste if you don’t have pasta sauce.

After that, put the lid on to cover the pan for 1-2 mins & once you can see some stream & bubbles, it means that it’s ready to eat – so quick and easy!

Make sure you mix up the tomato saucing & pasta beforehand alongside some pinches of salt & you have such a delicious healthy lunch right there.

It doesn’t take a lot of time & money in order to cook your own pasta recipe – see it for yourself when you can shop at your local grocery store before cooking them for your next lunch meal.

You’ve got to try two amazing plant-based chicken ranges from Birds Eye, such as the plant-based chicken style tenders & chicken strips.

Not only they have a decent health star rating of 3.5 (tenders) – 4.5 (strips) out of five, but it has no artificial colours or flavours. Plus, they’re high in protein which is perfect for meat free Mondays during any day or night of the week, as well as those who rely on a vegan diet.

The plant-based chicken strips ain’t bad when I had the chance other day during dinner, which is great for pairing salads, noodles, pasta & rice alongside various vegetables & sauces. But for me, the plant-based chicken style tenders taste better when it comes to the delicious crumbs & the meat-free variety in it.

These meat-free tenders are even a better combination when making healthy sandwiches/burgers (here’s a picture alongside a few Mini Potato Cakes that I’ve covered last week here).

Make sure you cook them beforehand as per instructions regardless of your choice of cooking appliance, since these packages come in frozen. And you can select whichever Birds Eye plant-based chicken range you like that is available in stock right now for $6.50 at your local Coles supermarket here.
